It all started when, at the request of her son, a famous California culinary veteran followed him to Annapolis, MD to make sure he had the healthy, delicious authentic Mexican foods, California style, that he grew up eating. Focused on the very best for her family, she decided to start Diego's restaurant to ensure that he and his community of friends could have a steady supply of her signature cooking.
Her operating rules are very specific, maybe borderline obsessive. She uses only the best ingredients and spends hours preparing everything fresh every day. She buys only the best tomatoes, avocados, onions, peppers, and spices to make Diego's numerous fresh, handcrafted signature salsas, sauces and trimmings every day for its hallmark salsa bar. She orders and cooks only the best meats fresh daily, roast beef, steak, pork loin, chicken breast, and she insists on charbroiling them because she thinks thats the way they taste the best. She simmers her beans fresh, twice a day from her own special recipe, without lard. She refuses to use any prepackaged, offsite-prepared or frozen items for her home-cooked, healthy, authentic cuisine.

We admit its impractical, but its the best way to make wholesome ingredients give you the bursting flavors and honest freshness that thrill your taste buds.
